Quince tea in Korean culture is well known for it's healing properties for coughs and sore throats. It works as a soothing and preventative measure for children, elderly or anyone who strains their voice or is predisposed to coughs or sore throats.
YMJ's quince tea is made from quince that has been picked from trees that we planted and raised ourselves on our farm in Schofields. It has a stronger fragrance and flavour to what you may sometimes find in the supermarkets. By mulching the fruit completely we extract as much juice and flavour as possible from the quince which is usually a very dry fruit with very little moisture. It has undergone fermention with Australian raw sugar but there is the added goodness of honey too. 50/50 in proportion with the sugar. Adding some of our plum extract provides extra flavour and goodness.
Always remember, when making tea that is full of probiotics, never use hot or boiling water. This will kill all the good bacteria. Please use lukewarm water, ideally at 40 degrees, no highter than 60 degrees. You can always enjoy it cold too.
