Cheong Guk Jang is another fermented soybean food traditionally eaten by Koreans as a hot casserole type of dish. it is famous  for it's health  benefits and pungent fragrance. The fermenting agent  for cheong guk jang is also a strain of Bacillus, but unlike doen jang which ferments for at least 6 months before consumption, cheong guk jang ferments at a higher temperature for 2-4 days only.

 

Despite it's pungent smell, cheong guk jang has some amazing health benefits:

  • Cheonggukjang on the market is seasoned in advance to hide the distinctive smell and bitter taste of cheonggukjang, seasoning, and sugar.  Most products contain preservatives. 
    However, Jeonjeonjin Cheonggukjang is made in a scientifically improved way from the tradition of seasoning only with fermented soybeans and salt without any other additives. 
    After subdividing in the thawed state, be sure to refrigerate and consume within 2 weeks. Because it does not use preservatives, there is a risk of deterioration easily. 
    However, in the frozen state, you can still experience the original taste and nutrition even after one year.
