Yaemejin"s (YMJ) doen jang, soy sauce and cheonggukjang are made using only the finest quality Australian organic soybeans (ACO 41), Australian sea salt and pure water.

Our green plum extract and fermented quince tea are made from fruit hand picked from trees planted and cared for at our very own farm located in Western Sydney. 

​Australian organic ingredients

YMJ uses only organic soybeans and sea salt collected from the clean seas of Australia.

Organic soybean

Our organic soybeans are supplied solely by Kialla Pure Foods.

Kialla's organic soybeans are certificated organic in several countries including Korea and Australia. Kialla uses biodynamic farming methods, which is organic farming without the use of chemical fertilizers, pesticides, or herbicides.

In fact, biodynamic farming demands a much higher set of standards than organic farming. It is a holistic, ecological, and ethical approach to farming.

Biodynamic plants are grown in the ground in living soil, which provides a quality of health and nutrition not possible with chemical fertilizers or hydroponic growing. Biodynamic farms aspire to generate their own fertility through composting, integrating animals, cover cropping, and crop rotation.

Non GMO Soybeans

All farming was difficult due to the unfavorable drought in 2019-2020, and the price of soybeans increased by 30-40%.

Globally, the price of the five major grains rose by - 70% soybean, 82% corn, 29% wheat, 25% raw sugar (FAO announced on June 3, 2021).

Due to this  increase in the price of soybeans and shortage of supply of organic soybeans, we decided to release two types of doen jang in 2021 using either non-GMO or organic soybeans.

​Australian Sea Salt

YMJ uses Olsson sea salt.

 

Olsson crystallize their salt from two of the world's cleanest oceans that can only be found in Australia: the Great Barrier Reef and the Great Australian Bight.​

To make its sea salt, Olsson's use the method called "solar evaporation". Solar salt is produced by the action of sun and wind on seawater in large ponds. The seawater evaporates in successive ponds until it is fully concentrated and the salt then crystallizes on the floor of the pond. This is then scooped up, washed in seawater, dried and packaged.

Olsson salt has a sweet aftertaste without bitterness or astringent flavor, and it is exported to Korea as a high-quality salt. In the process of making doen jang and soy sauce, we dissolve a large quantities of sea salt in water. Unlike Korean sea salt, there is no sediment, dirty foam, or sand visible with Olsson's salt. 

A unique feature of Olsson's is that it comes from salt from two of the cleanest Australian waters in the world. No other chemical processes are involved, so it is guaranteed to be completely natural.

Green plums

Our green plums are picked from trees that we planted and cared for ourselves at our farm in Western Sydney.

Our plum trees are a Taiwanese variety that is considered to bear the highest quality fruit suitable for our purpose. We invited an expert horticulturalist from Korea to plant and nurture the plum tree saplings to bear healthy fruit. YMJ's farm in Western Sydney is a region that is free from natural pests that degrade the quality of the fruit allowing it grow without blemishes. Green plum extract's only other ingredient is Australian raw sugar and it is fermented with enzymes for more than 2 years before being bottled

Green plum extract is well known in Korean, Japanese and other Asian cultures to provide many benefits to our health and well being. It is frequently used in various food, beverages, sauces, etc.

YMJ's plum extract, quince tea, doen jang and soy sauce are the only one of its kind where all the processes of manufacture take place in Australia using ingredients that have all been sourced in Australia.
